Chef Schwaiger from Elite Catering will be preparing an amazing herbal infused 5 course menu.


Rolled Vegetable Slaw
Fennel, carrots, cucumber, butter leaf lettuce, tossed in a rice wine vinegar and dill vinaigrette with manuka honey

Prosciutto Wrapped Scallops
White wine and artichoke cream sauce, tarragon fluid gel, and crispy kale

Braised Goat Meat Ravioli
With mixed herb goat cheese in a mushroom truffle cream sauce

Chicken Supreme
With shimiji mushrooms, black garlic, caramelized onion broth, puree of potato, and asparagus.
Beef Tenderloin
Onion ash crusted tenderloin, puree of potato with truffle oil, fried daikon, grilled asparagus, and demi-glace.

Infused and served with rocky road chocolate ice cream.

*Members have until 09/15/19 to choose between Chicken Supreme or Beef Tenderloin, after that time membership menu choice is set by the Chef*

The Herbal Chef will host two dinners on consecutive nights, each accommodating up to 60 guests. The dinners begin at 7 p.m. and their location will be revealed to ticketholders just prior to the event. Tickets cost $200 (including gratuity and a gift bag).
